Gasthaus Spinas
Regional cuisine · Fondue & raclette
Far from any road, Gasthaus Spinas sits among larches in the Val Bever at just over 1,800 m – reached by Rhaetian Railway to the Spinas stop, on foot in just under an hour from Bever, on cross-country skis or by horse-drawn carriage. Host Roland “AK” Gruber, a South Tyrolean and the inventor of the “Hugo” aperitif, runs the historic inn with its two parlours, terrace and a bowling alley that is more than 100 years old. The kitchen relies on regional produce: homemade Capuns (chard-wrapped dumplings), Pizzoccheri, South Tyrolean dumplings and, in the evening, glacier fondue made with cheese from the Pontresina dairy. Be sure to book for dinner – and if you miss the last train, you can stay overnight in one of the twelve rooms.
Only reachable by lift, train or on foot – the car stays at the starting point. Reservations: required in the evening, by phone or online.
