Cordon bleu · Graubünden & Italian cuisine
In the Hotel Maria in the heart of Sils-Maria, the Stüva Marmoré is a Swiss stone pine parlour with an old stove made of Fex stone slabs and around 25 seats, popular with locals and visitors alike for decades. It is known for its cordon bleu of Swiss veal in eleven variations; alongside this, Andrea Chiari's team cooks Graubünden and Valtellina specialities such as capuns and pizzoccheri, as well as Italian dishes. In summer, meals are also served on the garden terrace. There are two sittings in the evening, and booking is strongly advised.
