At the Carlton Hotel, the Cerea family from Bergamo runs its Engadin outpost of the famous Da Vittorio. Under head chef Paolo Rota, the kitchen produces top-level Italian cuisine that impresses with first-class ingredients and a clear signature – the Paccheri alla Vittorio, with a sauce made from three kinds of tomato, has cult status. Dishes are served à la carte or as a “Carta bianca” menu of five to ten courses, complemented by an extensive wine selection and views of the lake. The restaurant holds two Michelin stars and 18 Gault&Millau points. It is open in winter only, Wednesday to Sunday evenings.
