Chesa Stüva Colani

Gourmet · Michelin star

7 min by car

In Madulain, Paolo Casanova cooks technically precise, strongly seasonal cuisine at the Hotel Chesa Stüva Colani. He forages his own herbs, ferments and bakes his bread in-house, earning a Michelin star and 17 Gault&Millau points. Besides the tasting menus, including a vegan one, the menu features classics such as Linguina ai Gamberi. For a more casual meal there is the Colani Bistrot, which holds a Bib Gourmand from the Michelin Guide.
